Known also as rocket or wrinkled grass. It has a particular taste, light yet spicy, it is used in cooking to flavour salads, mayonaise and potato salads. Pureed it can be added to soups and excellent in sauces, it can be used as a condiment for pasta; crushed up with pine nuts and parmesan cheese. It is one of the main ingredients in the classic mixed salad "misticanza". The seeds can also be used, for example to substitute mustard seeds or to enhance an oil with a pleasant taste. Cultivated rocket has a sweetish taste while wild rocket is spicy with a stronger taste. Its properties are: purification, digestive, stimulant, tonic and emollient. Eaten raw, it is an excellent stimulant in cases of weakness and fatigue.
