Mint Liquor

50g of dried mint leaves
600ml Alcohol 90°
335g granulated sugar
500ml water

Put the leaves into the alcohol and steep for a week.  Bring the water to the boil and slowly add the sugar, allow to thicken, stirring, until forming a syrup.  Once cooled, incorporate the syrup to the infusion.  Leave to steep for at least an hour, filter and then bottle.  The liquor can be consumed straight or diluted with water.
