Stevia extract

Ingredients:
- 1 litre of alcohol 95°
- 350g of fresh stevia leaves
- 350ml of water

Process:
Prepare the extract by putting the fresh leaves in the alcohol and leaving it to steep for 15 days.  Once the solution is filtered, dilute with the water.  At this point you can evaporate the alcohol, heating the solution on a low heat so that it will not ignite.  Then proceed by boiling the solution (high heat) until reaching the consistency of a syrup.  Obviously the more the extract is concentrated, the sweeter it will be.
It is estimated that 200g of syrup (using 1 lt of alcohol) has the same sweetness as approximately 14kg of sugar!
